These scrumptious lentil and mushroom meatballs make the perfect party food, sure to satisfy even the pickiest eaters!

Sweet & Tangy Lentil Meatballs

Ingredients

  • 1/2 cup cooked lentils
  • 1/2 cup cooked mushrooms
  • 1/2 cup vegetable broth
  • 1 cup Ritz Crackers crumbled for "breadcrumbs"
  • 2 tbsp Worcestershire sauce for vegan use Annie's Organic
  • 1 tbsp onions flakes
  • 1/4 cup flour to coat balls before frying
  • 1/4 cup vegetable oil for frying

for the sauce

  • 4 tbsp vinegar any kind
  • 2/3 cup jelly any kind
  • 6 tbsp barbecue sauce
  • 6 tbsp ketchup
  • 3 tbsp brown sugar

Instructions

  1. Mix together all ingredients for balls, slowly adding in vegetable broth and Ritz Crackers. Once you have a good consistency, form into balls, and coat in flour before frying in pan on stove at medium heat.

  2. For the sauce, mix all ingredients together and heat on medium-low. Once balls are ready, add sauce on top and set on low heat for a few minutes, then ready to serve!
